Cuisine in BrittanyBreton cuisine is characterised by its simplicity and the quality of products used. The combination of natural produce from the land with the treasures of the sea results in a mouth watering cuisine. As a seafaring community, the Bretons have successfully incorporated products from other parts of the world.
Brittany’s fishing fleet harvests many species of fish, such as sardines, pollack, mackerel, bass, sole, place, eel and turbot. Fresh water fish, particularly salmon and trout are available from the local rivers. Shellfish are the mainstay of Breton cuisine, and many can be found on the beaches, such as cockles and whelks. Mussels and oysters are raised in farms, langoustines and lobsters are caught in deep water.
The authentic Breton seafood platter must contain at least three types of crustaceans and three of shellfish. However, the composition varies depending on the season, and the life cycle of the crustaceans and shellfish. Frequently it comprises crabs, various types of oysters and clams, whelks, shrimps and prawns…served on a bed of seaweed.
Typical of how seriously the French take their food and wine, “La charte du plateau de fruits de mer frais Bretons” (Breton seafood platter charter) guarantees the freshness and variety of the products. So you may want to check if the restaurant is a signatory before ordering.
Crepes, “galettes” and Farz Forn are Breton specialities, coming in a wide variety of tastes and textures, depending on the regions. Galettes are savoury pancakes garnished with ham, cheese and mushrooms. Crepes are prepared using wheat flour and are sweet. They are usually washed down with cider or a special type of milk (“lait Ribot”). Farz Forn means “Butter Cake” and is a flan of eggs and milk.
